The first time I had Tabetomo was last year and it was amazing, 10/10 best ramen experience I've ever had. The soup was savory, rich, and so full of flavor I could've had just that soup for days on end. I went again recently and it was not nearly as good. The soup tasted very much of soy sauce and vinegar. I did like the takoya The seared mackerel was still amazing, but the tsukumen was a quality drop from the previous year. I did appreciate the service and the hot stones they provided to reheat the broth. If the quality were consistent, this place would be a 10/10 easily. I would recommend a visit here, as the atmosphere is very unique and authentic. The servers are great and cheerful, and I would come again the next time I'm in New York.

Chef Tomo once graced the kitchen at Tsujita Annex in West LA and it just wasn't the same when he left for New York. I finally made my way to his restaurant and his tsukemen was better than I remembered it. Although I didn't use one, I'm so glad the hot stone for your broth is available because I've often wished there was a way to warm the broth as it cools quickly. The service was great, the servers were welcoming and attentive. The restaurant is small, but the ramen is so good everyone finishes their meal rather quickly so you won't have to wait long.

The tonkotsu tsukemen ramen was good and enjoyed placing noodle piece by piece inside bowl/sause. It gives a different feeling of being able to eat something plain instead of your entire dish having same flavor by being inside all one bowl like the other dishes. You can manage the sauce little by little or dump ramen inside or dump some of ramen inside, a lot of flexibility which I like. The flavor of my Tonkotsu was delicious for my first ramen. The meat was tender as well. Adding some pepper in dish from the table added another layer of kick to my meal. The tonkotsu jiro ramen was a beef broth which was not for me but someone else who likes that flavor. Everything isn't for everyone. The size of both dish was worth the money and staff seem nice to their guest including me.

Ambiance (5/5): Having been to Japan, the restaurant had a classic Japanese restaurant style with bar seating onlooking the kitchen. There's a handful of floor dining tables. A decorated wall with photos and sake. It's brightly lit and not loud. Service (5/5): Since I was dining solo, I was immediately seated at the bar. The service was attentive and quick. Their menu prices on the website are out of date-- $19 vs $26 (?!) Food (4/5): I ordered the $26 tonkotsu chashu jiro tsukemen. This is a cold ramen dipping into the warm broth. This style is less common so I went this over the ramen. The broth was warm and salty with plenty of toppings, a whole soft boiled seasoned egg, *very* garlic-forward, and had a powerful umami depth. The ramen is thick and chewy; plenty portioned for me that I took half of it for leftovers. The pork slices were large and generous (2 in the broth, 2 outside it) but they were not melt-in-your-mouth texture. Nicely seasoned but can be a bit dry without dipping into the broth. Delicious, satisfying bowl! I can't wait to come back to try their ramen.
